CARIÑENA PROTECTED DESIGNATION OF ORIGIN

THE VINEYARD

The vines are located in a marked section of land (pagus) next to the winery, at an altitude of 550 metres. The soil is made up of pebbles from alluvial deposits and gravel. These are stony soils, which produce low yields, bunches with smaller and more concentrated grapes and of greater aromatic intensity.

THE HARVEST

We decide the optimal moment for the harvest based on regular controls of the ripeness of each plot.
The grapes are harvested manually in 15 kg boxes.

PRODUCTION

Made with grapes from a selection of the best ‘terroirs’ of our vineyard.
The grapes selected in the winery and de-stemmed are placed in French oak barrels where they are subjected to a pre-fermentation cold maceration process for 5 days. Alcoholic fermentation is carried out using native yeasts at a controlled temperature. Upon completing the fermentation, it is devatted and pressed with a vertical hydraulic press with a wooden bucket to subsequently carry out the malolactic fermentation.
The bottling of this wine is carried out without prior filtration, having spent a total of 21 months in new French Allier oak barrels. Limited production of 11,715 bottles.

THE 2013 VINTAGE

Spring was fairly rainy, with lower temperatures than other years. This caused a delay in the ripening of the fruit, but good weather in September led to adequate ripening and a good harvest.

TASTING NOTES

Intense cherry red colour, with deep purple tones. On the nose, predominant aromas of raspberries and blackberries, with hints of pepper and cloves, with great minerality and a toasted and balsamic background. On the palate, it has a voluptuous body, sweet, with tannins that are both potent and smooth. It is a highly potent and well-structured wine.
