CARIÑENA PROTECTED DESIGNATION OF ORIGIN
THE VINEYARD
The vines are located in a marked section of land (pagus) next to the winery, at an altitude of 550 metres. The soil is made up of pebbles from alluvial deposits and gravel. These are stony soils, which produce low yields, bunches with smaller and more concentrated grapes and of greater aromatic intensity.
THE HARVEST
We decide the optimal moment for the harvest based on regular controls of the ripeness of each plot.
The grape harvest is carried out mechanically at night, when temperatures are milder, which reduces oxidation and helps keep all its sensory potential intact. This low-temperature harvest yields more complex and fruity wines.
PRODUCTION
Made with grapes from a selection of the best ‘terroirs’ of our vineyard.
The grapes selected in the winery and de-stemmed are placed in stainless steel tanks where they are subjected to a pre-fermentation cold maceration process for 5 days. Alcoholic fermentation is carried out using native yeasts at a controlled temperature. Upon completing the fermentation, it is devatted and pressed with a vertical hydraulic press with a wooden bucket to subsequently carry out the malolactic fermentation.
The bottling of this wine is carried out without prior filtration, having spent a total of 21 months in new French Allier oak barrels.

THE 2013 VINTAGE
Spring was fairly rainy, with lower temperatures than other years. This caused a delay in the ripening of the fruit, but good weather in September led to adequate ripening and a good harvest.
TASTING NOTES
Very intense cherry red colour, with purple tones. Intense bouquet with a predominance of ripe wild berries, with hints of spices and great minerality. On the palate it is sweet, balanced and powerful with very smooth tannins.
